You can use either the alcohol test or jel meter test which are both addressed in this book. Samantha Michaels does a good job also of explaining how pickling is full of probiotic microbes and healthy bacteria and how the process happens.Not only are the recipes in this book good for fruits and vegetables but there are great tips on dry goods as well as nuts and nut butters. There is also another section that goes into detail about the importance of seasonal canning and tips for beginners on everything from types of produce that is best for what method to what tools are needed to complete this process.An added section to the book is how to store meat, dairy and eggs for the best long term results. It is great to learn about the different methods needed to start building my cupboards for when times are harder, but also to help avoid chemicals and processed foods and turn to a more self sustainable way of living. Good book for someone who has never canned before. I read some of the reviews that complained, but it seems as those were for more advanced and detailed techniques. It is does not seem intended to be a full blown recipe book. I have never canned before and always wanted to know how. This books covers all the basics, which is what I wanted. I learned A LOT. It seems like a really detailed yet simple process. Lots of techniques were covered, and some info on safety, which is my biggest concern. I got a good idea of what I will need to buy, and some great ideas of where to start. Some stuff I did not even know I could can! In the end I feel like a got a pretty decent idea of what is involved. When I finally get around to trying it, it will not be so intimidating. I will in all honesty end up getting another book (or two), simply to make sure that I am doing everything correctly. This is a small book that covers many different subjects. I wish the book had been longer (it is only 40 pages) with more details and recipes and pictures of the steps. The Pictures it has are great of finished projects. The concept of canning is here, and it may get you interested in canning, however as someone that was a beginner not to long ago this book doesn't lack enough details, and no charts. It does not explain water bath vs. pressure canning. The book lacks details about altitude. This is a good book if you've stepped away from canning and you are coming back as you already know the basics and just need a refresher. What few recipes in the book are a base but leaves you freedom to make your own, however that can be scary as a new canner. I did find the placement of Chapter 15 beginner tips at the end of the book odd. I would of thought this would be something to share before someone dived into the book. I have also made jam, and while to each their own, boiling my jars for 2 minutes does not seem nearly enough. The wording in this book I did not find to always run smooth "These equipment include" to me should of read "This equipment includes" . So no I wouldn't give it to a new beginner, but to someone that has the basics and is maybe re-entering the canning world. As for the "preserving" parts of the book, I am tempted to try the egg method, and it does discuss nut butters, and ice cream. A interesting little book that maybe needed more pages of details but overall it was alright.I did receive this book free though this is no way to alter my views and opinions I have given, and I do not know this author personally.
